Happy Mother's Day
Mom, I want to "Thank You" for all that you have done for me, and continue to do; words are just not enough. Therefore, I'd like to pass onto you, something I have worked on all morning, something that you can use over and over again, since we both share the love for squash... Pay attention; there's a twist.
Oh Mama Mia Pumpkin Bread Loaf
1 2/3 C. Flour
1 C. sugar
1/2 C. brown sugar
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt (I use sea salt)
1 to 2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1 C. butternut, acorn, hubbard, whatever; squash
1/2 C. vanilla yogurt
2 eggs
1/4 C. canola oil
8 oz. pineapple (with juice)
3/4 C. walnuts
In a large bowl, add the first 9 ingredients, set aside. In another large bowl (or if you are lucky enough to own a kitchenaid mixer; use that bowl) mix together the pumpkin, opps, I mean butternut or whatever type of squash you choose, yogurt, eggs, oil, pineapple, and lastly the walnuts. Bake in a preheated 350*F Oven for 60-90 minutes or until a toothpick poaked in center comes out clean.

Morning girl...hope you had a beautiful Mother's Day...I use grated zucchini squash to make cakes and muffins...taste like carrot cake! right now I use alot of zucchini and yellow squash to make squash patties...I love squash anyway I can get them! lol Hope you are having a fantastic weekend sweetie....Picket
