Aren't Friday's Great

Today, I'm trying to figure out what to do with all my leftover cukes. I have already made; bread and butter pickles, and sweet relish. We are not big picklers, so didn't really want to make dill pickles.

We have had alot of summer squash this year, I came up with a really delicious way to cook them. Start your grills; ladies...

Gather your squash, wash, slice into 1" slices lay them flat.
Then, prepare a small dish with Olive oil, basil, onion powder, and garlic salt or powder,
brush the oil on each slice with a basting brush, grill, and once they are cooked thru, (approx. 10 minutes) top them off with Asiago cheese. (Can you believe, my hubby loves summer squash now) he he...


All my Tom-atoes were ruined by blight this year; :( I wanted to cry, I had such plans for them. It ended up that I had to pluck them all from the ground, and carry them away to discard them. Needless to say, I had to buy stock in tomatoe sauce. Not all bad, in town, there is a family that makes "the best" spaghetti sauce ever... "Morgia's" I stopped in and started my stash, a few more stops will get us our winter supply. I will use the plain tomatoe sauce for such things as pizza sauce, chili sauce etc.

Blight is a terrible thing, it not only attacks tomatoes, but spreads into potatoes as well. Once you discover blight, it is very important that you get rid of all the affected plants, throw them away. Clean your garden of any fruits or veggies that fell from these plants, as blight can carry over into next years crops. I'm going to try my planter boxes this year, for a fall garden, I have read that you can plant all kinds of things in the fall prior to the first frost, you just have to mulch over your plantings. I'll keep you all informed...

My sister is rolling her sliced squash in a cajun seasoning and drying them. They are wonderful.

She also has used squash in cakes and you cannot taste it, just gives it a differant texture.

YES - frinday's are WONDERFUL!! You have been busy - I'll have to try the strawberry kiwi jam.

As for the cukes - um.......sweet pickles come to mind and that is about it.

With us it's cucumbers we didn't have. Anyone is our area wasn't able to grow them. I did purchase 44 lbs. of them, wish it could have been a 100. We love Bread & Butter pickles. I had to travel 1 hour one way to get them.

Thanks ladies for coming over, Scrappy, If we were only neighbors, I would have been tickled to give you all my extra cukes...

An hours drive one way, you must "love" bread and butter pickles. They are hubbies favorites also! I looked up a recipe for Banana Jam, and hope to give that a whirl. The website is www.razzledazzle.com they actually had quite a selection for canning.

Quilted simple, not to brag or anything but that strawberry kiwi jam turned out great, you'll love it.

I'm so sorry about your tomatoes, Mel... mine didn't make it either. Such strange weather we've had this year!
