The Jam

First, I get my Jelly jars boiling for about 10 to 15 minutes.

Next, I gather all my ingredients
1 bag of frozen starwberries (defrosted)
3 kiwi's
5 cups sugar
1 TBLS. crystallized ginger
1 container of fruit pectin

Chop the kiwi and mince the Crystallized ginger add to an 8 quart sauce pot, then add your 3 cups of strawberries.

Mash the berries (I use a whisk) once berries are mashed add the packet of pectin, bring to a boil, continue to boil for 1 minute; stir constantly. After all ingredients has boiled for a full minute, add the 5 cups of sugar, bring this to a boil stirring constantly; boil for 5 minutes, then remove from heat. Grab your jars from the boiling water as needed and pour the hot Jam into the jars leaving 1/4 of an inch head space, then place lids on jars. Once all jars are filled place in a hot water bath for 15 minutes to boil. Remove each jar and place on a towel, upside down if you'd like; to seal.

I used 8 ounce Jelly jars and this recipe provided me with six jars of jelly... Mmmmm
Lets break out the ritz crackers, shall we?

Looking good. I love making jam even though only 1 person eats it in our home. It makes great gifts.
